|
The physiological effects of deer antler and oriental medicinal plants were investigated for the development of functional beverages. Results revealed beneficial physiological functions, such as radical scavenging effect, supoeroxide dismutase-like activity, xathine oxidase inhibition, and angiotensin converting enzyme inhibition effects. The developed beverage made with the extract of deer antler and oriental medicinal plants showed higher overall sensory quality than those of the commercial products. Results indicate that the extract of the oriental medicinal plants have various physiological functions, and the developed beverage products using the extract also have an acceptable sensory quality for commercial potential.
